Sous Chef

Peppers Craigieburn Resort, nestled in the picturesque Southern Highlands of New South Wales, is currently seeking a passionate, dedicated and highly skilled Full Time Sous Chef. Having earnt a reputation as one of the region’s premier venues for accommodation, leisure stays, conferencing, weddings and retreats this unique role will ensure no two days are the same. Reporting directly to the Head Chef, you will run your own section ensuring food service is provided to the highest standard as seamlessly as possible as well as assisting other sections as required. In addition, your main responsibilities will include, however are not limited to: Control the pass as required Ensure the highest food safety & hygiene standards are adhered to Support the Head Chef in seasonal menu design drawing inspiration from locally sourced produce Support the Head Chef in a banquet menu design that will appeal to a wide audience whilst focusing on quality and cost efficiency Ensure food costs are managed inline with set budget Rostering to ensure labour costs are managed efficiently Stock control and ordering Management of junior team members to foster a culture of passion and daily education relating to standards & menu as well as supporting their career development About You You are highly driven, creative and passionate about what you do. You are most excited when using local produce to create amazing food memories for our guests and thrive when given authority to use your culinary flair. You are reliable, level-headed and able to ensure continuous improvement through your ability to think outside the box. You will also hold: Formal qualification in commercial cookery (or equivalent) Previous experience as a Sous Chef or Junior Sous Chef, minimum 2 years Well versed in HACCP and food, safety and hygiene legislation Experience working in a fast paced environment Impeccable attention to detail Clear communicator with outstanding organisational skills Experience leading and motivating a team with a focus on performance & productivity, positive culture and development Availability to work across a 7 day roster including weekends, late evenings and public holidays Why Join Us Peppers Craigieburn is a beautiful property part of the Accor Apartments & Leases Portfolio.
