The Role
We are seeking an energetic, creative, hands-on and career focused Sous Chef to join our Kitchen team.
Reporting to the Executive Chef, this role will see you run your own section ensuring a seamless food service is provided to the highest standard. You will also hold the following primary responsibilities in and out of the kitchen:
- Control the pass
- Participate in prep and production areas of the kitchen (all meal periods, plus conferencing and weddings) with passion, enthusiasm and creative flair to ensure outstanding service, quality and efficiency
- Providing supervision and guidance to junior Chefs supporting the on boarding and ongoing development of junior kitchen team members ensuring to create an inclusive, high performing culture in line with Company values
- Support the Executive Chef with seasonal Menu creation for both the Restaurant and Banqueting ensuring we remain authentic to the direction of the restaurant whilst managing food costs
- Assist with administrative elements of the department including but not limited to rostering, stock take, ordering and end of month reporting
- Ensure compliance with food safety, hygiene, HACCP and workplace health and safety legislation and regulation
- Implement strategies to minimise waste and optimise usage of produce
About You
You are highly driven, creative and passionate about what you do. You are most excited when using local produce to create amazing food memories for our guests and thrive when designing a menu that showcases the best of the region. You are reliable, level headed and able to think outside the box. You will also hold:
- Formal qualifications in Commercial Cookery (or equivalent)
- Strong career history with minimum 2 years experience as a CDP
- Strong experience in either in al a carte or conferencing
- A confident and creative cooking style with a strong emphasis on quality and presentation
- Demonstrated ability to work within budgets without sacrificing quality
- A flexible approach in adapting to guest requests
- Experience leading and motivating a team with a focus on performance & productivity, positive culture and development
- Strong time management skills, impeccable attention to detail and the ability to work well under pressure
- Well versed in HACCP and food, safety and hygiene legislation
- Availability to work across a 7 day roster including weekends, late evenings and public holidays

Salary Guide: $70,000 – $80,000 per annum
